Lentil Nachos




This is partly an original creation. I got the idea for making taco filling out of lentils while eating some leftover snobby joes. So, I based the lentil mixture on that recipe. I changed the spices to resemble Mexican food and made it a little drier. The cheesy sauce is from La Dolce Vegan. It's made from nutritional yeast and mustard, as well as a few other things.

This dish needs some tweaking, but I think it has the potential to be a good replacement for traditional Mexican food. I used to eat Mexican food a lot, so I've been searching for something with familiar flavors.

My roommate, Andrew, ate this in taco form. He was pretty impressed by the cheesy sauce. I can't remember his exact words, but it was probably something like, "This actually isn't bad". He ate the whole thing, so that's a good sign.
