
This is another pretty fast and definitely easy meal. The rice is a mix from Knorr. They indicate what is in their natural flavors, which is commendable. Vegans are plagued by the natural flavor ingredient. (For those not aware, natural flavor can pretty much indicate anything. Meat, milk, egg...doesn't matter, so it's normally easier to avoid the product than contact the company and ask) The spanish rice mix is vegan friendly and it's pretty decent. I wouldn't put this amongst my favorite dishes, but it's easy to make.
I cut up the tofu, dust it with flour and pan fry it. Then I add it to the rice mix while for the last few minutes of cooking, so that it picks up a little of the flavor.
This takes about 15 minutes to make, maybe less. You need to have your tofu drained and pressed, though. (Or my preference: pressed, drained, frozen and then thawed). This works well for me as a quick lunch between classes.
The mix costs about $1.29. I use, probably, a half block of tofu, so that costs about $1.50 depending on the brand. So, for around $3 I have a pretty good, fast lunch.
