Peanut Butter Cookies



I love peanut butter and I'm pretty sure everyone loves cookies. So, I definitely love peanut butter cookies, these are from page 116 of The Joy of Vegan Baking. My roommate, Josh, made this batch of cookies. This recipe has an optional ingredient of ground peanuts, but we didn't have any on hand.

The egg in this recipe is Ener-G egg replacer and soy milk was used instead of milk. I have no idea how long it took to make these because I sat in the living room and did a prelab while Josh made them. Not too long, though.

A lot of vegan desserts are pricey, but these cookies are not more expensive than the equivalent non-vegan peanut butter cookie.

I thought these were really good when dunked in soy milk. (The soy milk is pictured above inside my very tasteful unicorn and rainbow secretary mug that I found at good will)

I would put these cookies up against non-vegan peanut butter cookies and challenge anyone to tell the difference.
