Snobby Joes



Snobby Joes (from Veganomicon page 98) offer a familiar flavor, food just like mom used to make. The flavor is really good, but instead of beef these are made from lentils. Lentils are high in fiber, which makes you feel full! I made these over Christmas and the following exchange occurred between me and my omnivorous cousin Jeff:

Jeff: Those are really good.
Me: Thanks.
Jeff: No really, I would actually eat these.

He also mentioned that he thought that they would make great tailgate food and I agree. I think veggies and omnivores alike can enjoy these sandwiches.

I made a double batch and three people ate with plenty of leftovers. These reheat really well, so I like to make extra. It's hard to estimate how much it costs to make this because there are quite a few spices and some maple syrup involved. My best guess would be about $8 for the double batch.

Prep. time is about 1 hour. There is quite a bit of onion and green pepper chopping and a lot of waiting while things simmer.
