Smoky Tempeh and Sauteed Collards




This is smoky tempeh (from Veganomicon page 130) and sauteed collards (from Veganomicon page 106). I'm not sure I would offer this up to any and all omnivores, but any veg would probably enjoy this dish. My roommate, Andrew, is an omnivore and he enjoyed it. He tried it and said, "I would eat this...actually, I will eat this". He continued to eat the rest that I had made.

The tempeh had an interesting nut flavor, but the really good flavor comes from the marinade which had a delicious smokiness and made the tempeh a little juicy. The tempeh is supposed to be grilled, but since it is about 2 degrees Fahrenheit outside here in Ohio, I opted for pan frying. The collard greens were sauteed in garlic and the leftover marinade from the tempeh. The true flavor of the collard greens came through, but they were definitely enhanced by the marinade.

This is a very nutritious dish as well, just on the plate above there is 24g of protein, 13g of fiber, a good amount of calcium and iron, 10g of fat (1.5 sat fats), no cholesterol and no sugar.

It only took about 25 minutes to prepare and cook, minus the hour that tempeh marinated and I did something else.

I would estimate this meal (two servings of what's pictured above) cost about $7.
