German Apple Cake



Vegan desserts are hard to come by in the omnivorous world, so most of the time we're on our own. An inexperienced vegan baker (like myself) can run into a lot of problems when trying to substitute vegan ingredients into old recipes. That's why sometimes it's best to start from a vegan recipe.

This is German Apple Cake (from The Joy of Vegan Baking page 76). The topping really makes this cake. It's apple slices covered with brown sugar, cinnamon and ginger. Several people tried this cake and we all agreed that more topping was in order. The cake doesn't offer a lot of flavor, but it was still good and a good vessel for the topping.

This cake uses applesauce in place of eggs, which is of course appropriate for an apple cake. There is a version of this cake that replaces the faux butter with more applesauce, which makes this cake fat free. I will definitely be revisiting this cake with more topping and no faux butter.

A lot of vegan desserts are expensive because they require ingredients like fake cream cheese or fake chocolate chips. This recipe, however, is made from pretty basic ingredients and is no more expensive that a 'typical' dessert.

Prep. time is about 30 minutes for this cake. The longest part of the prep. is skinning and slicing the apples for the topping.
